2 cups dried black eyed peas
1 inch piece of ginger, peel and shredded
spinach or kale (I used a large container of fresh spinach)
1 tsp tumeric
1.5 tsp cumin
1/2 tsp cayenne pepper.
2 cans of diced tomatoes
1/2 cup or so of veg broth – to the desired consistency – add more for soupy , less for stewy)
Cook the beans per instructions (soak, cook on the stove or use the pressure cooker). set aside
Add a little olive oil to a large pot and once it heats up, throw in the chopped greens (spinach or what not) and steam them until they are bright green.
add the two cans of drained tomatoes.
shred the ginger over the pot and add the spices and broth – let this simmer for a while, mix in the black eyed peas
once it’s all hot and simmered – eat with rice or pasta 🙂
